Cheesemaking has come to Milwaukee. The city’s first urban cheese factory (and one of only a handful in the country), Clock Shadow Creamery, passed inspection Wednesday for its state dairy plant license. According to the creamery’s owner Bob Wills, cheesemaker Ron Henningeld will start making cheese curds Friday, June 15, for the weekend. Saturday they expect to finish up their first batch of quark, a versatile soft, fresh German cheese that is a cross between cream cheese and sour cream.
